This is a recipe I like to break out when I have just a small amount of fruit around the house. You can use almost any fruit you have on hand and mixing and matching is half the fun. I often make a large batch of the crisp topping and keep it in the fridge which makes this recipe even more simple! Serve this tasty treat with a scoop of vanilla ice cream and enjoy that you won’t have any leftovers to tempt you later.
Ingredients:
Filling:
- 1 cup fruit, chopped small (I used strawberries and blueberries)
- 1 tablespoon granulated sugar.
- 1/2 teaspoon lime juice (this is what I had on hand. Lemon juice would be good as well)
- 1 tablespoon all purpose flour
Topping:
- 1 tablespoon butter, cold and diced
- 1 tablespoon all purpose flour
- 1 tablespoon brown sugar
- 1/4 cup old fashioned oats
- 1/8 teaspoon cinnamon
- 1 pinch of salt
Directions:
Preheat the oven to 375 degrees.
Combine all the ingredients for the filling. Stir them well and place them in a small greased baking dish.
Place all the ingredients for the topping in a small bowl. Mix them together by hand to really incorporate the butter into the dry ingredients.
Spread the topping evenly across the fruit mixture.
Bake the crisp for about 25 minutes or until the fruit is bubbling and the topping is starting to brown.
This is delicious with ice cream or whipped cream. You can share with someone else if you want, but you don’t have to. I won’t tell!
